The kitchen
At Sánicolò two fires are going at once: the wood oven for the pizzas and the stove in the kitchen. Dough on one side; fish, fresh pasta and grilled meat on the other.
Fish arrives whole and is cleaned on site: red mullet, squid, swordfish. That's where the mixed fry, the spaghetti allo scoglio, the seafood risotto and the pistachio-crusted sea bass come from. Aubergines are fried for the parmigiana and for the Norma, the Sicilian way.
The rest is what an osteria does: starters to share, house-made pasta, big salads, Sicilian desserts. Lunch and dinner, seven days a week.


The dough turns in the mixer, then rests. It's opened by hand on floured marble, one disc at a time, no rolling pin.
The pizza goes in, turns, and comes out in a couple of minutes with a puffed rim and dark blisters. That's the moment worth watching from your table.
There is no afternoon break: the oven stays lit between lunch and dinner, seven days a week.

Fish is filleted in the kitchen, aubergines are fried in pieces, mortadella is sliced to order. What you see on the plate begins long before.

Gluten free and vegetarian
Any pizza on the menu (classic, house special, stuffed crust) can be made on a gluten-free base for € 3.00 extra. It's not a shorter list: it's the same list.
One honest note: we work in a single kitchen where wheat flour is handled every day. We're careful, but we can't guarantee the complete absence of traces. Tell whoever takes your order and we'll talk it through.
The menu has parmigiana, caponata, maccheroni alla Norma, penne with courgette and salted ricotta, gnocchi with gorgonzola and walnuts, grilled vegetables and salads. Among the pizzas: Vegetariana, Norma, 4 Formaggi, Biancaneve, Siciliana, Ortolana.
